Basic Vinaigrette

My favorite homemade salad dressing is a basic vinaigrette (or vinegar-ette if you prefer to say it with four syllables), with freshly pressed garlic, freshly squeezed lemon, red wine vinegar, olive oil and salt. So simple and incredibly fresh.
- 3 to 5 cloves garlic, pressed
- 1 teaspoon kosher salt
- 1 tablespoon fresh lemon juice
- 1 tablespoon red wine vinegar
- 6 tablespoons extra virgin olive oil
Mash garlic and salt to a creamy mortar, then add the remaining ingredients. Mix everything together, shaking vigorously before dressing a small salad.
