Biscuits and Gravy
I grew up in Oklahoma and a big breakfast there would sometimes include biscuits smothered with sausage gravy. Last night my mom arrived from Oklahoma to visit our family for a week or two. To welcome Mom, I made biscuits and gravy today for brunch, using the recipe that my Okie brother-in-law taught me years ago.
I know I say this a lot, but this is a super easy recipe and it only takes three ingredients besides the biscuits, unless you count water or salt and pepper. Perhaps that’s because it’s usually the kind of cooking I do, easy peasy. I grew up in a family who ate canned biscuits rather than homemade, so I have never mastered the art of biscuit making yet. While the store-bought, refrigerated biscuits are baking, cook the sausage gravy and serve them hot. Enjoy!
Biscuits and Gravy
- 1 pound pork sausage
- 1/2 cup flour
- 24 ounces evaporated milk + 12 ounces water –OR– 4 cups milk
- salt and pepper
- canned refrigerated biscuits
Cook sausage on medium high until browned. Add flour and stir into the sausage 1 to 2 minutes to lightly cook the flour. Pour in the evaporated milk then fill one can with water and stir until it thickens. Serve over top of a biscuit, cut in half.
