Brownie Bites
I have a weakness for brownies and even though I usually don’t eat the pumpkin candy corn on top, I can’t help but to add the little iconic Halloween treat when I make these each year. Here’s a quick recipe to make your own. You can easily add what ever candy or treat on top you’d like, or nothing at all. Even squish in a Reese’s Peanut Butter Cup mini if you feel the need.
Brownie Bites
- 2 ounces unsweetened chocolate
- 6 tablespoons butter
- 1/4 teaspoon salt
- 1 cup sugar
- 2 eggs
- 1 cup flour
- 1/2 cup pecans
Preheat oven to 350 F degrees. Heat butter and chocolate in microwave on high for 1 to 2 minutes. Stir until smooth, then add in salt and sugar. Then stir in eggs, flour and pecans. Using a small stainless steel scoop, fill each mini muffin liner with a heaping scoop full. Bake for 16 to 17 minutes. Press in optional candy on top of each brownie bite. Makes about 24.
