Cornbread Casserole
Cornbread Casserole is an ideal side to serve with barbecue, pork chops, pork loin, chicken, sausage and more. The texture is similar to cornbread, but not quite as dry and with more add-ins.
One of the local barbecue chains, Pok-E-Jo’s, serves a cornbread casserole that is slightly similar to this. You’ll love this side, packed with corn in a crunchy, sweet texture with a bit of spiciness.
Cornbread Casserole
- 2/3 cup flour
- 1/2 cup cornmeal
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup butter, melted
- 1 cup sour cream
- 1 egg
- 2 cans corn, 15 ounces, drained
- 1 can diced green chilies, 5 ounces
- 1 jalapeño, seeded and finely chopped
- 3 green onions, chopped
