Green Peas & Bacon Salad

This colorful Green Peas and Bacon Salad, hearty and satisfying — with bacon, eggs and cheese, pairs nicely with almost anything, plus can be made a day or two in advance.
Green Peas and Bacon Salad
- 6 slices bacon (reserve 1 tablespoon bacon grease for dressing)
- 3/4 cup mayonnaise
- 1 tablespoon honey
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 20 ounces frozen green peas, thawed
- 3/4 cup cheddar cheese, cubed
- 2/3 cup celery, chopped
- 1/2 cup hard boiled eggs, chopped
- 1/3 cup onion, chopped
Slice bacon, then cook on medium heat in a skillet until crispy. Reserve 1 tablespoon of bacon grease. Mix together mayonnaise, honey, sugar, salt, pepper and bacon grease for the dressing.
Prepare vegetables, eggs and cheese. Stir gently to combine everything together. Refrigerate to chill for 30 minutes. Serve as a side or by itself as a snack.
