Homemade Cracker Jacks
Popcorn can get jazzed up in no time with this simple Cracker Jacks stovetop recipe.
Ingredients
- 2 bags Orville Redenbaucher microwave popcorn, popped
- 1 cup sugar
- 1 cup heavy cream
- 3/4 cup light corn syrup
- 3 tablespoons butter
- 1/4 cup dry roasted peanuts, optional
Pop the popcorn, then empty the bag onto a large platter to sort away any unpopped kernels to discard, to yield about 12 cups of popped corn.
In a large nonstick pan, combine sugar, cream, syrup and butter. On medium high, cook until the mixture darkens to a caramel color, and reaches 235° F.
Remove from the heat and stir in the popped corn, followed by the peanuts. Stir until evenly coated, then turn onto a nonstick baking mat or surface, breaking apart large clumps with a spoon.
After the Cracker Jacks batch has cooled completely, carefully break apart into small clusters, then store in an air tight container.
