Island Cookies
Gloomy, chilly weather today has me longing for sunshine, so I baked Island Cookies, a favorite recipe from my Nestle Toll House Cookbook that I hope you’ll enjoy.
Island Cookies
- 1-2/3 cups all purpose flour
- 3/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup brown sugar
- 1/3 cup sugar
- 1 teaspoon vanilla extract
- 1 large egg
- 3/4 cup butter, softened to room temperature
- 1 cup flaked coconut
- 1 cup pecans
- 1-3/4 cups semisweet chocolate morsels
Preheat oven to 375 F degrees.
Combine flour, baking powder, baking soda and salt in small bowl. Beat butter, brown sugar, granulated sugar, and vanilla extract in large mixer bowl until creamy. Beat in egg. Gradually beat in flour mixture. Stir in morsels, coconut and nuts. Drop by slightly rounded tablespoon onto Silpat lined baking sheet.
Bake for 8 to 11 minutes or until edges are lightly browned. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
Yield: 3 dozen, 153 calories each
