Sassy Chicken Salad Bites

Chicken salad sandwiches on homemade dinner rolls were our Sunday night dinner a couple days ago. The rolls are gone but there’s a small amount of the chicken salad remaining. I whipped up this pregame snack before my son’s baseball game tonight and don’t want to forget it, so here’s what I did.
Scoop a spoonful of Sassy Chicken Salas on top of a Carr’s sesame round cracker, then add a thin slice of Dutch Gouda cheese for an easy and hearty appetizer.
Sassy Chicken Salad
- 1 can (10 ounces) Rotel tomatoes, drained
- 1/2 cup mayonnaise
- 1 tablespoon honey
- 12.5 ounce can chicken breast, drained
- 1 cup celery, chopped
- 2/3 cup dried cranberries
- 1/2 cup finely chopped red onion
- 1/3 cup toasted pecans, chopped
