Tuna Salad Bites
While making tuna salad today for lunch, I had an epiphany to add diced green chiles and now will probably always make it this way. It’s so good. Here’s what I did to prepare this five-minute appetizer. I already had hard boiled eggs, peeled and stored in the refrigerator, so that helped. Also, this is enough to make some sandwiches too. Snacks for now, sandwiches for later.
Tuna Salad Bites
- 20 ounces canned tuna, drained
- 6 hard-boiled eggs, diced
- 1 small red onion, chopped finely in food processor
- 6 baby dill pickles, chopped finely in food processor
- 4 ounces diced green chiles
- 1/2 cup Miracle Whip
- 1/2 cup tomatoes, diced
Mix everything together in a bowl, then serve on bite-sized crackers, sandwich bread or rolls. I cut out little circles of sharp cheddar cheese with my apple corer to put on the cracker first, then a small spoonful of the tuna salad. Refrigerate until serving.
