Watergate Salad
My mom has been making this classic easy recipe since the 1970s, but instead of Cool Whip, I use heavy cream. The instant pistachio pudding dessert takes about five minutes to whip up.
Watergate Salad
- 16 ounces crushed pineapple with liquid juices (don’t drain)
- 8 ounces heavy cream
- 1 cup marshmallows
- 1/2 cup toasted pecans
- 3.4 ounces instant pistachio pudding mix
Whip the heavy cream until soft peaks form, whether in a stand mixer or a handy whipped cream maker. Combine everything into a mixing bowl, stirring together until well blended. Spoon into dessert cups or into a serving bowl. Add a few marshmallows to the top for a garnish.
Refrigerate until serving. Makes 6 servings.
