Peanut Butter Cookies
Who doesn’t love peanut butter cookies? Unless you’re allergic to nuts, I must believe that these are some of the best treats there are. They remind me of my Grandma Jackson, who passed away when I was a little girl. Peanut butter cookies with the fork marks in them are so classic and homemade feeling and I hope that you’ll enjoy them as much as I do.
- 1 cup peanut butter
- 1 cup butter, softened to room temperature
- 1 cup sugar
- 1 cup brown sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 2 eggs
- 2-1/2 cups all-purpose flour
Mix everything together in a Kitchen Aid mixer (or what ever you use). Stir in each ingredient in order. Preheat oven to 350 degrees Fahrenheit. Scoop balls of dough using a medium stainless steel scoop, drop each one into a bowl of sugar. Spoon sugar over each dough ball, then place onto Silat-lined baking sheet. Press with a fork to create a crisscross pattern on top of each cookie. Bake for about 9 minutes each. Cool, then remove from cookie sheet. Makes 46 to 48 soft and chewy cookies.
They will look puffed up then will sink a bit after cooling.
